Great recipe for nice fresh Halibut use your finest B.C.white wine as the flavor will carry right through!!!!. Serves 4Ingredients3/4 cup white wine2 eggs beaten3/4 cup sliced almonds3 tbsp butter4 skinless Halibut fillets 6 to 8 ozSalt and Pepper to taste1/2 cup Flour1 tsp garlicMethod1. Cook almonds on medium heat until toasty and aromatic set aside.2. Season Halibut with S&P, dredge the filets in flour and then dip them into beaten egg. Coat the fish entirely in the toasted almonds.3. Melt the butter in a large non stick fry pan over medium heat, add the white wine and garlic until it begins to bubble add the halibut cook for approximately 5 mins. a side or until fish is opaque and breaks apart easily.4. Serve immediately with a bed of rice or a garden salad top with remaining sauce in the pan and some lemon wedges. This is one of my favorites to cook for my friends you can add many different herbs to it as well like dill, tarragon, or fine herbs provencale.
